Packed with vegetable protein and fiber lentils are great! Nearly half of their carbs come from fiber. They are also ideal for vegetarian and vegan diets.
- Bring water to a boil in a pot and turn to low (~ 1:1.5 ratio of lentils:water)
- Place lentils into pot with lid closed and cook for ~45min
- Season with coconut oil, salt and pepper
- Oil pan with coconut oil and turn to medium heat
- Cook eggs the style you want
- Spice with salt and pepper
