Brown rice can get boring, but a little creativity can change everything!!

Ingredients (4-6 servings):

  • 3 cup brown rice (cooked)
  • ¾ cup corn
  • ¾ cup peppers
  • ¾ cup diced tomatoes
  • 2 tbsp coconut oil

 

Cooking Instructions:

Rice:

  1. Rinse and wash 2 cups of brown rice and place in pot
  2. Add 3 cups of water and turn the temperature to high
  3. Once the water starts to boil, turn the temperature to low and allow the rice to soak up the water
  4. Once the water has soaked up all the water (approximately 1 hour), turn stove off

Vegetables:

  1. Wash and slice mushrooms
  2. Add half a tablespoon coconut oil to pan and then add mushrooms
  3. Cook on high until there is no more water in the pan (water comes out of the mushrooms)
  4. Add chopped asparagus and peppers to pan that contains mushrooms
  5. Cook on medium heat for 15 min
  6. Once cooked, add 2 eggs to the pan containing mushrooms & asparagus

 

Mix the rice and vegetables:

  1. Once eggs and rice are cooked, mixed the two together.
  2. ENJOY!
