The problem with lasagna is that it is loaded with gluten.  At The Optimal You we have overcome this problem.  Replaced the gluten loaded lasagna strips with a healthy source of carbs, yams.

 

Cooking Instructions:

Ground Beef

  1. Oil pan with coconut oil and turn to medium heat
  2. Sauté diced onion in pan until golden brown (~15min)
  3. Spice beef with salt, pepper, garlic powder, coriander and oregano
  4. Add beef to pan, mixing frequently until meat is brown throughout (~10 mins)
  5. Season beef with tomato sauce, corn, peas and allow it to cook on low heat for additional 5min

Yams

  1. Preheat oven to 375˚C (190˚F)
  2. Peel and chop yams into small cubes
  3. Oil cooking tray with coconut oil and cook yams in oven until soft throughout (~20min)

The Mix

  1. Layer yams and ground beef, sprinkle some cheese and allow to warm up on stove at low temperatue until cheese melts
