A low carb and gluten-free alternative to tacos? Heck yeh!
Just swap out the tortilla for a lettuce shell. Tortilla’s nowadays are high in carbs, highly processed, filled with gluten, and often made of corn (a common GMO). Replacing the tortilla with a lettuce shell still gives the crunchiness, but without all the added garbage. Go organic with the lettuce!
Best part is you can customise these tacos with your favorite source of protein (recipe below is with beef).
Directions
Ground Beef

- Oil pan with coconut oil and turn stove to medium heat
- Sauté diced onion in pan until golden brown (~15min)
- Spice ground beef with salt, black pepper, cayenne pepper, chile pepper and ground garlic
- Add ground beef to pan, mix frequently and cook until beef is brown throughout (~10 mins)
- Once cooked, turn stove temperature to low and add tomato sauce
Vegetables

- Oil pan with coconut oil and turn to medium heat
- Sauté chopped peppers, shredded carrots and corn for ~10min
- Spice with salt and pepper
The MIx
- Use the lettuce leaves to make as many lettuce tacos as desired and serve with chopped cilantro
