Store bought cookies are loaded with sugar and tones of unhealthy ingredients.

The solution?  Bake your own with minimal ingredients! These cookies are a great source of fiber, which is vital for optimal health.  You want to aim for 30g of fiber each day, which helps keep you regular and promotes weight loss and detoxification.

Ingredients:

Recipe makes 12 cookies

– 1/2 cup coconut oil
– 1/2 cup packed light brown sugar
– 2 eggs
– 1 teaspoon vanilla extract
– 1.25 cup of rice flour
– 1 teaspoon baking soda
– 3/4 teaspoon ground cinnamon
– 1/2 teaspoon salt
– 2.75 cups rolled oats (gluten free)
– 1 cup raisins
– 1/4 cup almond slices

 

Cooking Instructions:

  1. Pre-heat oven to 375 degrees F (190 degrees C)
  2. In large bowl, cream together coconut oil and brown sugar until smooth
  3. Beat in 2 eggs and vanilla extract until fluffy
  4. Gradually add in 1.25 cup rice flour, 1 tspn baking soda, 3/4 tspn cinnamon and 1/2 tspn salt
  5. Stir in 2.75 cup oats and 1 cup raisins
  6. Place cookie dough in clumps the size of a large tablespoon onto cooking sheet (on a baking tray)
  7. Bake for 10 minutes in preheated oven, or until golden brown.
  8. Once baked, cool slightly and remove from cooking sheet
  9. Cool completely
