Directions
- 1. Fill pot with 2 cups of water
- 2. Add lentils to the water and bring to a boil on high-heat
- 3. Reduce heat to medium-low, partially cover and simmer until lentils have softened and water is absorbed (30 mins)
- 4. Transfer lentils to a medium bowl and mash with a fork
- 5. Heat and oil a pan with coconut oil (medium heat)
- 6. Add chopped onions, stirring, until softened (about 6 minutes)
- 7. Add spinach and stir until spinach is wilted (3 mins)
- 8. Add spinach mixture and onions to lentils and mix well
- 9. Cover and refrigerate for at least an hour or overnight
- 10. Form mixture into six 4-inch patties
- 11. Preheat grill to medium and add 1 teaspoon coconut oil
