A high protein vegan/vegetarian burger patty!

Directions

  1. 1. Fill pot with 2 cups of water
  2. 2. Add lentils to the water and bring to a boil on high-heat
  3. 3. Reduce heat to medium-low, partially cover and simmer until lentils have softened and water is absorbed (30 mins)
  4. 4. Transfer lentils to a medium bowl and mash with a fork
  5. 5. Heat and oil a pan with coconut oil (medium heat)
  6. 6. Add chopped onions, stirring, until softened (about 6 minutes)
  7. 7. Add spinach and stir until spinach is wilted (3 mins)
  8. 8. Add spinach mixture and onions to lentils and mix well
  9. 9. Cover and refrigerate for at least an hour or overnight
  10. 10. Form mixture into six 4-inch patties
  11. 11. Preheat grill to medium and add 1 teaspoon coconut oil
